as stoves have long been the kings of the kitchen. The “tik-tik-tik” before their burners flare to life is instantly recognizable. They have a reputation for being powerful, responsive, and, well, downright chef-y. However, research about how gas stoves can affect our health and contribute to greenhouse gas emissions has led many (including me) to question this loyalty.

1. Duxtop Portable Induction Cooktop 9100MC

The Duxtop 9100MC had the best scores in both performance and ease of use throughout my testing. It was the fastest to boil water, maintained long simmers well, and was intuitive to adjust while cooking.

2. Hamilton Beach 34104 Single Burner 10-inch Black Induction Cooktop

This burner was a close runner-up to the Duxtop 9100MC and excelled in many of the same areas. It was great at keeping the cooking heat steady throughout every task and had 12 temperature levels that could be set in Fahrenheit or Celsius.

3. IKEA TILLREDA Portable Induction Cooktop

This sleek induction burner doesn’t have as many features as some of the other models I tested, but its efficiency and straightforward interface made it a capable companion for most cooking tasks.

4. Breville PolyScience the Control Freak

This Breville PolyScience induction cooktop doesn’t come cheap, but the intuitive control panel, included probe, and hyper-precise ability to control temperatures down to the degree are what make this model the one we use in the Serious Eats test kitchen.

5. Duxtop LCD Portable Double Induction Cooktop

Duxtop’s double-burner induction cooktop is a convenient option when juggling multiple dishes or cooking for a crowd. This one has accurate temperature settings, a bright display panel, and boil and lock functions that make it easy to use.
